Paleo Cauliflower Gnocchi with Creamy Garlic Spinach Sauce
Gnocchi is such a fun food to me. Little soft pillows that soak up flavor. Traditionally, these little dumplings are made from potatoes, but it seems in this day in age they can be made from any vegetable! Trader Joe’s came out with their infamous cauliflower gnocchi a couple years back, and I immediately became obsessed. I am a cauliflower lover! They are paleo, vegan and full of veggies. I decided to try my hand at making a similar version, and they came out fantastic. I have been making them on repeat in big batches, because they freeze well! I have not tried this with any flour except for Cassava, but the cassava works perfectly. This spinach sauce is a light yet flavorful topping. No stove-top required for the sauce, just a high speed blender!
Smoky Tahini Carbonara Pasta Sauce
There is nothing like a creamy sauce over some pasta. Probably one of my favorite comforts in life is curling up on a cool fall day with a big bowl. This tahini based sauce is seriously tantalizing to the taste buds. It has a cheesy flavor coupled with a little bit of smoke that comes from the touch of liquid smoke. Pairs perfectly with any veggies that you might want to add. I also love to use this as a dressing on salads. Serve it with any pasta shape!
Beet “Falafel” Pizza Crust with Sun Dried Tomato Hummus and Avocado
The first time I made this crust was for a dinner party. I had a bunch of leftover beet hummus that I had made and I thought it would be fun to make a falafel-inspired crust. It came out fabulous! I decided to top it with some sun dried tomato hummus, and no lie—the chickpea on chickpea combo was fabulous! Protein packed for sure. Add some creamy avocado on top and some veggies and each slice was a few hearty bites of heaven. One slice is pretty filling, which is why this is meant for a crowd. It makes a perfect and beautiful appetizer idea. Perhaps the next football Sunday party!
Creamy Chocolate Banana Tart with Cashew Oat Crust
Tarts are probably one of my favorite desserts. They can be light or decadent, and the flavor possibilities are endless. Chocolate will forever have a place in my heart, and this chocolate banana tart is my go to when I’m looking for an easy but fancy dessert. This recipe doesn’t call for any baking, and it requires just a simple few steps. The crust is made from cashews and oats, and it has just a small amount of sweet from unrefined coconut sugar. The sweetness in the chocolate filling comes mostly from the bananas. Serve this at your next dinner party and I promise it will be a hit.
