Lemon and Herb Quinoa

I love quinoa--it is a super versatile grain and has a delicious, nutty flavor. It makes a great addition to bowls, salads and even oatmeal! However, I don't love quinoa that is not cooked just right--it cannot be overcooked or undercooked, it has to be just right! I am sharing my method here to make the absolute perfect quinoa every time, and also how to elevate the flavor with just a couple simple ingredients. We add some dried oregano and lemon juice to add a subtle flavor, and it pairs great with just about any savory protein or veggie. This dish takes just five minutes to prep and then it finishes on the stove, making it a perfect meal prep recipe, packed with fiber and protein.

Born and raised in New England, I am a big seafood lover! In particular, I love the versatility of white fish--cod and haddock in particular. They have a mild flavor and perfect for infusing with a variety of flavors, cook very quickly and can be used as a main protein, tacos, salads, bowls and soups. This dish takes ten minutes to prep and is paired with tender roasted cherry tomatoes, lots of garlic and fresh basil--an iconic summer dish. I love to pair this one with some lemon-herb quinoa or some simple roasted potatoes and a green salad. This cod is an easy weeknight meal or meal prep recipe, packed with lean protein and fresh veggies.

This one pan meal is one of my regular go-tos! It is a family favorite, packed with flavor and perfect for meal prep. I love using chicken thighs in recipes, and this one uses bone-in, skin-on chicken thighs that get nice and crispy on the top and tender and juicy from the creamy salsa sauce. The recipe is simple, made with minimal ingredients and comes together in under 30 minutes! The creamy salsa is made with cashews and a jar of salsa to create a velvety sauce to simmer in. I love to serve this one with some tortilla chips for dipping or some rice to soak up that delicious sauce. Top it with some feta cheese, avocado or fresh cilantro, as desired.

These bars are one of my favorite protein treats! They taste like cookie dough, but they have a nice crunch due to the crisp rice cereal. We use only a handful of ingredients and they come together in just ten minutes! Perfect for a midday snack, clean sweet treat for dessert and great for on the go. I love to include these in my weekly meal prep rotation, because they are easy and keep well in both the refrigerator or the freezer. Each bar has about 7 grams of protein, depending on how you slice them, and they are packed with healthy fats from coconut oil and cashew butter. We add crispy rice cereal for a little bit of crunch, which makes the texture super satisfying. The recipe is simple, made with minimal ingredients and comes together in just ten minutes!

To me, there in nothing better than a perfectly tender, puffy, baked sweet potato. They are convenient to have on hand and versatile, with an endless number of uses. I love to enjoy sweet potatoes for breakfast, topped with yogurt, nut butter and fruit or stuffed with some eggs and avocado. They are also a great starchy side to pair with almost any protein for lunch or dinner, or my favorite way is stuffed with taco meat and my Mango-Avocado salsa. These sweet potatoes require only 5 minutes of prep time, so you can pop them in the oven while you meal prep or while you are prepping the rest of dinner. I love that these are customizable and the toppings are endless, not to mention super nutritious!
