Growing up on the East Coast means I can enjoy seafood any day of the week. There are so many seafood variations you can make and they don’t have to be complicated at all! These scallops are a great example. All you need are a few ingredients and you are set to have one of the best meals ever.

Ready to start? Here’s how you make these Ranch Seasoned Waffle Fries and Garlic Ghee Scallops:
To make the scallops taste extra delicious, pat the scallops dry with paper towels as much as possible. Then, season the scallops with salt and pepper.

Heat up 1 tbsp ghee in a large pan over medium-high heat. Add the garlic clove and let it cook. After 1 minute, add the scallops. Spread them out so that the juices don’t ruin the seat! Sear the scallops 2 minutes per side. Once ready, remove the scallops from the heat and place them on a plate.

To make the fries, slice the waffles with a waffle fry cutter or slice thinly if you do not have one. Add the coconut oil and the rest of the seasoning for the fries. Toss until they are evenly coated. Put the potatoes into the air fryer and allow them to cook for 10 minutes on 375, gently flipping them every 3 minutes. Serve the fries with the scallops and serve with some greens, salsa for dipping, and avocado if desired.

Ingredients

Scallops

  • 1 pound medium scallops
  • 1 tbsp ghee
  • 1 garlic clove, sliced
  • salt & pepper to taste

Fries

  • 2 cups mini potatoes
  • 1 tbsp coconut oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dill seed
  • ½ tsp parsley
  • ¼ tsp salt
  • ¼ tsp pepper

Optional:

  • greens, salsa, mini avocados

Instructions

    1. To make the fries, slice the potatoes with a waffle fry cutter or slice thinly if you do not have one. Add coconut oil and the rest of the seasoning for the fries. Toss until evenly coated. Put into the air fryer and allow to cook for 10 minutes on 375, gently flipping them every 3 minutes.
    2. To make the scallops, pat the scallops dry with paper towels. This step is crucial if you want a good sear! Season the scallops with salt and pepper.
