Ingredients

  • 2 cups old-fashioned oats
  • 2 cups crispy rice cereal
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup cocoa powder or chocolate protein powder *see notes
  • 3/4 tsp salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 2 tsp vanilla
  • 1/2 cup chocolate chips
  • 1/4 cup chia seeds

Instructions

Preheat the oven to 275. Line a sheet pan with parchment paper and set aside.

Add the oats, rice cereal, coconut, cocoa powder and salt to a large bowl. Mix to combine and set aside.

Add the coconut oil, maple syrup and vanilla to a separate bowl and mix to combine.

Add the wet mixture to the dry mixture and toss until well combined. Add the chocolate chips and chia seeds and toss to combine.

Pout the mixture onto the sheet pan and spread out, then place in the oven for 30-35 minutes.

Allow the granola to cool completely before storing.

Notes

* If you want to add some protein to the granola, you can use chocolate protein powder in place of the cocoa powder.

* Use gluten-free oats for gluten-free.

* You can use cacao nibs in place of the chocolate chips if you want a more hearty granola.

* Store this granola in an airtight jar in a cabinet for up to two weeks.
