About this Recipe

By: Caitlin Greene

I am a huge seafood lover having lived on the East Coast for so long and can have them any day of the week. There are so many variations you can make with them and they don’t have to be complicated at all. These scallops are an example of an easy meal to make. All you need are a few ingredients and you are set to have one of the best meals ever.

Here are what you will need to make these Ranch Seasoned Waffle Fries and Garlic Ghee Scallops:
-scallops
-ghee
-garlic clove, sliced
-mini potatoes
-coconut oil
-garlic powder
-onion powder
-dill seed
-parsley

How do you make these Ranch Seasoned Waffle Fries and Garlic Ghee Scallops?
To make the scallops taste extra better, pat the scallops dry with paper towels as much as possible. Then, season the scallops with salt and pepper.

Heat up 1 tbsp ghee in a large pan over medium-high heat. Add the garlic clove and let it cook. After 1 minute, add the scallops. Spread them out so that the juices don’t ruin the seat! Sear the scallops 2 minutes per side. Once ready, remove the scallops from the heat and place them on a plate.

To make the fries, slice the waffles with a waffle fry cutter or slice thinly if you do not have one. Add the coconut oil and the rest of the seasoning for the fries. Toss until they are evenly coated. Put the potatoes into the air fryer and allow them to cook for 10 minutes on 375, gently flipping them every 3 minutes. Serve the fries with the scallops and serve with some greens, salsa for dipping, and avocado if desired.
