This recipe is perhaps one of the best meals I’ve made in a while. I love a quick and easy meal and this Creamy Tuscan Basil Garlic Shrimp hit the spot! Especially when paired with pasta and some veggies, this recipe is delicious. It’s crazy cold in Boston and all I want is a cozy meal like this. So let’s make this bowl together!

Ready to start? Here’s how you make this Creamy Tuscan Basil Garlic Shrimp:

First, heat a pan over medium heat. Add the 2 tsp coconut oil into the pan. Then, add in the onions, garlic, and bell pepper. Cook the veggies for about 2 minutes, tossing occasionally.

Once fragrant, add the shrimps, chopped tomatoes, and basil, and cook for another 3-4 minutes. Add the coconut milk, salt, pepper, and coconut aminos. Stir well. Bring to a boil and then reduce heat to medium-low and allow the shrimps to cook for another 5 minutes.

If you want to serve with pasta, toss in the cooked pasta, add steamed spinach (optional) and more chopped tomatoes (optional). Serve and enjoy while it is still warm.

  • ½ cup diced onion
  • 2 cloves garlic, minced
  • ¼ cup chopped bell pepper
  • 1 tsp coconut oil
  • ½ lb frozen wild shrimp
  • ⅓ cup chopped tomatoes
  • ¼ cup chopped basil
  • 1 cup full fat coconut milk
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp coconut aminos
  • Optional: 1 serving cooked pasta, steamed spinach, chopped tomatoes
