Waffles are so much fun to make and I got a new mini Belgian waffle iron so I had to try it out. I’ve been wanting to make a vegan and Paleo recipe for a while and this one came out perfect!
Waffle Ingredients: (made about 7 of these mini waffles)
- 1 Cup almond flour
- 1/4 cup arrowroot
- 1/4 cup mashed plantain
- 1 scoop plant protein (I used @mrm_usa)
- 1 flax egg (one tablespoon flax and 3 tablespoons water–let thicken for 5 mins)
- 1/2 cup almond milk
- 1 teaspoon lemon juice
- pinch of sea salt
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon baking soda.
***If you want sweeter add vanilla and maple syrup and sub banana for plantain
Mix together dry ingredients then add wet—-batter will be thick. Heat waffle maker and cook according to instructions.
