I made another super easy lunch yesterday and I cannot get enough of it! The sauce is super easy to make and just requires one bowl! In the recipe, you can choose regular Greek yogurt or dairy-free Greek yogurt and the same goes to the parmesan cheese. What I love about these easy lunches is that you can add whatever else you want with it. I added smoked salmon, avocados and dill, but you can switch them up and add what you want.

What are the ingredients needed for this Creamy Cheesy Lemon Paprika Pasta?
-pasta of choice
-cooked spinach
-greek style yogurt
-garlic clove
-lemon juice
-olive oil
-coconut aminos
-onion powder
-paprika
-vegan parmesan (I have a recipe below as well or sub for regular parmesan)

To make your own parmesan, you will need:
-Raw, unsalted cashews
-salt
-garlic powder
-nutritional yeast

How do I make this Creamy Cheesy Lemon Paprika Pasta?
First, bring a large pot of water to a boil and cook pasta according to directions on the box. Once ready, toss together the pasta with the spinach and sauce.

Then, to make the sauce, add the yogurt, garlic clove, lemon juice, salt, lemon zest, olive oil, coconut aminos, onion powder, paprika, and parmesan to a blender and blend until smooth, scraping at the sides.

To make the parmesan, add the cashews, salt, garlic powder, and nutritional yeast to a blender and blend until a powder forms. Finally, add the pasta, smoked salmon and avocado to a plate.

Creamy Cheesy Lemon Paprika Pasta

Ingredients

  • Amount smoked salmon
  • 1 avocado, sliced
  • 1 box pasta of choice
  • Amount cooked spinach

Sauce

  • ½ cup greek style yogurt
  • 1 garlic clove
  • 1 tsp lemon juice
  • ½ tsp salt
  • Zest from 1 small lemon
  • 1 tbsp olive oil
  • 1 tsp coconut aminos
  • ½ tsp onion powder
  • ⅛ tsp paprika
  • 2 tbsp vegan parmesan (recipe below or sub for regular parmesan)

Parmesan

  • ¼ c cashews
  • pinch of salt
  • pinch of garlic powder
  • 1 tbsp nutritional yeast
