There is nothing better than coming home to a warm and cozy soup on a cold winter! I love simple soups that can be made by throwing everything into a pot. This is one of them that is simple to make.

What is this Shrimp Tortilla Soup made of? Here are the ingredients you will need to make this soup:
-medium onion
-red pepper
-garlic cloves
-tomato sauce
-salsa
-Broth of choice
-cumin
-chipotle powder
-garlic powder
-salt
-coconut aminos
-lime juice
-tomato paste
-Shrimps
-olive oil
-cilantro
-tortilla strips
-avocado
-jalapenos
-fresh tomatoes

How do you make this Shrimp Tortilla Soup?
First, heat a skillet with the oil over medium heat. Add the chopped onions and red peppers and saute until fragrant. Add the minced garlic and saute for another minute. Then, add the tomato sauce, salsa, broth, water, cumin, chipotle powder, garlic powder, salt, coconut aminos, lime juice and tomato paste. Cook for about 20 minutes, stirring. If you want a thinner soup, add more water

Finally, in a bowl, toss the boiled shrimps in olive oil and cilantro. Once the soup is ready, top the soup with the shrimps, tortilla strips, avocado, cilantro, jalapeño and fresh tomatoes.

20-Minute Shrimp Tortilla Soup

Ingredients

  • 1 medium onion, chopped
  • ¼ cup red pepper, chopped
  • 2 tsp oil
  • 2 garlic cloves, minced
  • 15 ounce canned tomato sauce
  • ⅓ cup salsa
  • 1 cup broth
  • 1 ½ cups water
  • 4 tsp cumin
  • 1 tsp chipotle powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • 1 tbsp coconut aminos
  • 1 tsp lime juice
  • 1 tbsp tomato paste

Instructions

    1. Heat a skillet with 2 tsp oil over medium heat. Add the chopped onions and red peppers and saute until fragrant. Add the minced garlic and saute for another minute. Then, add the tomato sauce, salsa, broth, water, cumin, chipotle powder, garlic powder, salt, coconut aminos, lime juice, and tomato paste. Cook for about 20 minutes, stirring. *NOTE: for a thinner soup add more water NOTE: for less spice cut down on cumin amount.
    2. In a bowl, toss the boiled shrimps in olive oil and cilantro.
    3. Once the soup is ready, top the soup with the shrimps, tortilla strips (to make your own, slice a couple of tortillas into strips and air-fry), avocado, cilantro, jalapeño, and fresh tomatoes. Enjoy!
