If you are like me, you absolutely love fried plantains! They are so tasty and can be served as a main dish or as a side dish. For this skillet though, the plantains are the star of it. You can bake or air fry them and add any toppings you want! Enjoy!

Ready to start? Here’s how you make these Paleo Chipotle Plantain Fiesta “Nacho” Skillet:

First, slice the plantains and spray them lightly with avocado oil. Combine the seasoning for the plantains and mix them into the sliced plantains, tossing them so that they are evenly coated. Air-fry them for 10 minutes on 350, flipping them halfway.

Meanwhile, preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Once the plantains are ready, lay them in a cast-iron skillet and brush with a hot sauce of choice, add tomatoes, sliced jalapenos, and cheese (if desired). Bake for 7-10 minutes. Once ready, remove the plantains from the oven and top with toppings of your choosing. I added greens, avocado, fried eggs, cilantro, and some crumbled cheese.

  • 1 cup sliced plantains
  • ½ teaspoon Chipotle powder
  • ½ teaspoon Salt
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • ¼ teaspoon Paprika 
  • hot sauce to taste
  • ¼ cup chopped tomatoes
  • 2 tablespoons sliced jalapenos
  • Optional: Cheese of choice
  • Toppings of choice: greens, avocado, fried eggs, cilantro, crumbled cheese
