I cannot believe we are in May already. It feels like the days and months are going by so fast. Summer is just around the corner now and I cannot wait for the warm weather to arrive. With this in mind, I wanted to create a simple crowd-pleasing recipe that is perfect if you’re short on time and want an easy meal to put together.
These Swedish Meatballs will become one of your favourite go-to recipes. Why? The meatballs are made with cottage cheese for an extra creaminess to them. To make these meatballs even better, they get paired with a 5-ingredient gravy and cooked down to perfection. You can have them as is or serve them with some veggies and mashed potatoes.

How do you make these Swedish Meatballs and the gravy?
First, preheat the oven to 400 degrees F. Mix together the ingredients for the meatballs in a medium bowl. Form them into meatballs about 1.5 inches in diameter, and place in an oven-safe pan (or a baking sheet). Place the pan in the oven and bake for 22-24 minutes.
Then, while the meatballs are baking, make the gravy. Blend the sour cream with the broth, mustard, coconut aminos and potato starch (or gluten-free flour, cornstarch, tapioca starch, regular flour). Heat the mixture for the gravy over medium-high heat and whisk. As it comes to a boil, reduce heat to medium and continue to whisk.
Finally, remove the meatballs from the oven when it is ready. Pour the gravy over them and heat again over medium-high heat for 2-minutes.

Ingredients
Meatballs
- 1/4 teaspoon each: dried oregano, dried basil, paprika, dried thyme, cumin
- 1/2 teaspoon each: salt and pepper
- 1 cup chopped onion
- 1/2 cup minced mushroom
- 1 egg
- 1 pound ground turkey
- 1/2 cup Hood Country Style Cottage Cheese
- 1 tablespoon coconut aminos
- 1 teaspoon minced garlic
- 2 tablespoons almond flour
- 1 tablespoon chopped parsley
Gravy
- 1/4 cup sour cream (regular or dairy free)
- 1 cup broth of choice
- 1/2 teaspoon mustard
- 1 tablespoon coconut aminos
- 1 tablespoon of potato starch (or gluten-free flour, cornstarch, tapioca starch or regular flour)
