One of my favorite breakfast is waffles. They are so simple to make yet filling and satisfying. The fun part is choosing the toppings. The options are endless and for this plantain waffle, I chose to go with a sweet option and topped mine with some berries and ice cream. You can top yours with anything you want. The plantain makes this waffle good with both sweet and savory toppings.

These are the ingredients I used to make this Paleo Plantain Waffle:
-coconut flour
-ground flaxseed
-eggs
-ripe plantain
-vanilla extract
-sea salt

Here is how I made this Paleo Plantain Waffle:
First, add the flour, flaxseed, and salt together in a bowl. Combine well.

In a separate bowl, combine the egg, egg whites, plantain and vanilla extract together. Whisk until all the ingredients are well incorporated.

Then, add in the flour mixture and combine well. Heat a waffle maker and spray it with some oil. Pour in the batter and allow to cook for a couple minutes.

Finally, once the waffle is ready, top with your favorite toppings and enjoy!

  • -3 tbsp coconut flour
  • -1 tbsp ground flaxseed
  • -1 egg
  • -2 egg whites
  • -½ ripe plantain
  • -½ teaspoon vanilla extract
  • -Pinch of sea salt
