CRISPY BAKED VEGGIE TORTILLA SAMOSAS with a GINGER CILANTRO AVOCADO CREMA! These are a cross between a quesadillas and a crispy ravioli 🙃They are delicious and I have a vegan option!!! Filled with sautéed asparagus, onion, peppers and mushroom. Topped with pea shoots, hemp seeds and tahini. You can fill them with anything your heart desires!

Samosas:

  • tortillas (see my IG highlights to see how to assemble)
  • sautéed veggies (I used asparagus, onion, peppers, and mushrooms)
  • 1 egg whisked or dairy free milk

Directions:

Cut the tortillas in half and fold one side down then the other creating a triangle. Assemble samosas using egg OR dairy free milk for vegan. Stuff them with your filling. Using egg or milk close them shut pressing together with fingers. Brush with coconut oil and bake on 400 for about 15 minutes (until crispy)

Avocado Crema: 2 ripe Avocados, 2 tablespoons coconut cream, 1/2 cup cilantro, 1 small piece of fresh ginger, 2 tablespoons lime juice, 2 tablespoon coconut aminos, 1/2 teaspoon salt (process in food processor until smooth).
