Wafflin’ on a Wednesday….maybe we can make this a 2018 trend guys and gals?! 😆 I know it is a new year, but my favorite toppings have not changed! Fruit + nut butter…truly cannot go wrong! These paleo Plantain Waffles are surely a go-to! Fluffy and slightly sweet…with no added sugar!

Recipe:

  • 1/2 large ripe plantain
  • 4 egg whites
  • 1 egg
  • 1/4 cup Bob’s Red Mill Paleo baking flour
  • 1/2 scoop of Sunwarrior Warrior Blend plant protein powder
  • 1/2 tsp cream of tartar
  • 1/4 tsp of baking soda

Blend all ingredients in blender until smooth (I used my Nutribullet). Cook waffles to waffle maker instructions (I cook mine for 2-3 minutes).
