Paleo Plantain Waffles

I know it is a new year, but my favorite toppings have not changed! Fruit + nut butter...truly cannot go wrong! These paleo Plantain Waffles are surely a go-to! Fluffy and slightly sweet...with no added sugar!
- 1/2 large ripe plantain
- 4 egg whites
- 1 egg
- 1/4 cup Bob's Red Mill Paleo baking flour
- 1/2 scoop of Sunwarrior Warrior Blend plant protein powder
- 1/2 tsp cream of tartar
- 1/4 tsp of baking soda
- Blend all ingredients in blender until smooth (I used my Nutribullet).
- Cook waffles to waffle maker instructions (I cook mine for 2-3 minutes).
