Sheet Pan Spiced Chicken and Feta
Ingredients
- 2 lbs boneless chicken thighs, cut into small chunks
- 1 tbsp olive oil
- 3 tbsp unsweetened plain Greek yogurt
- Juice of one lime
- 3 tbsp tomato paste
- 1 1/2 tbsp honey, plus more for optional topping
- 1 tbsp paprika
- 1 tbsp cumin
- 1/2 cup chopped fresh cilantro, divided
- 1 tsp salt
- 3 cloves minced garlic
- 1/3 cup crumbled feta cheese
- 1/2 cup chopped cherry tomatoes
- Hot sauce, optional
Instructions
Preheat the oven to 400. Line a half sheet pan with parchment paper and set aside.
Add the chicken to a large bowl, then add the olive oil, yogurt, lime juice, tomato paste, honey, paprika, cumin, 1/4 cup cilantro, salt and garlic. Toss everything well to combine.
Spread the chicken out onto the sheet pan, then bake for 30 minutes. Remove the chicken from the oven and drain the liquid from the sheet pan. Place the sheet pan back in the oven for 5-7 minutes.
Top the chicken with the feta, cilantro, tomatoes, honey and hot sauce, if using.
