Salmon is seriously my top favorite seafood. I can eat it everyday if I can. They are easy to make and packed with nutrition. You can pair it with a side of veggies or anything else you would like. For this meal, I made a side of zoodle salad to go with it and I cannot be happier enough for them.

Here are the ingredients I used to make this Southwestern Zoodle Salad with Chipotle Yogurt Dressing and Chili Lime Salmon plate.
-fresh salmon fillet
-Trader Joe’s Chili Lime Seasoning
-coconut oil
-zucchini or premade zoodles
-tomatoes
-jalapeno
-red onion
-goat feta
-cilantro
-corn
-chipotle powder
-avocado
-dairy free yogurt
-chipotle hot sauce
-sliced lime
-coconut aminos

How do you make this Southwestern Zoodle Salad with Chipotle Yogurt Dressing and Chili Lime Salmon?
First, make the salmon. To make the salmon, pat the salmon dry with a paper towel. Season the salmon with the chili lime seasoning. Heat a skillet with coconut oil over medium high heat and add the salmon. Sear the salmon for 3 minutes per side. Once ready, add to a plate.

Then, make the zoodles. To make the zoodles, top the zoodles with the tomatoes, jalapeño, red onion, goat feta, cilantro, and corn. Season the zoodles with the salt and chipotle powder.
Heat a pan with some oil over medium high heat. Add the zoodles and allow to charr for a few minutes. Once ready, add to the plate with the salmon.

Finally, make the salmon. To make the dressing, add all the ingredients for the dressing- dairy free yogurt, chipotle hot sauce, a squeeze of lime juice and a few dashes of coconut aminos, together. Whisk until smooth. Drizzle the zoodles and salmon with the dressing. Serve with some sliced avocados or any other ingredients you will like.

  • Salmon
  • -1 lb salmon fillet
  • -1 tsp Trader Joe’s Chili Lime Seasoning 
  • -1 tbsp coconut oil
  • Zoodles
  • -2 large zucchini, made into zoodles
  • -½ cup tomatoes, sliced
  • -sliced jalapeno
  • -¼ cup red onion, chopped
  • -½ cup goat feta
  • -¼ cup cilantro
  • -¼ cup corn kernels
  • -salt to taste
  • -a couple dashes of chipotle powder
  • -½ avocado
  • Dressing
  • -½ cup dairy-free yogurt (I used almond milk yogurt)
  • -1-2 tsp chipotle hot sauce
  • -juice of 1 lime
  • -2 tbsp coconut aminos

Instructions
