I made this fun Paleo Plantain Pancake and sliced them into pizza style slices. I had so much fun adding the various toppings. You can choose whatever you like. I topped mine with some berries, bananas, yogurt, avocadoes, and chocolate. Even better, if you do not count the toppings, this pancake takes 5 ingredients to make only!

What are the ingredients I need to make this pancake?
plantain
coconut flour
Eggs (or two flax eggs with 2 teaspoons psyllium husk)
plant protein powder
cream of tartar
baking soda
vanilla extract

How do you make this pancake pizza?
First, add the plantain, coconut flour, eggs (or flaxeggs), plant protein, cream of tartar, baking soda and vanilla extract (optional) into a blender and blend until smooth.

Heat up a skillet on medium high heat and brush with some oil. Pour the batter evenly into the skillet. Allow to cook for about 3 mins then place under the broiler to finish. Top the pancake with yogurt, berries, granola, chocolate, banana, avocado or anything you want!

Ingredients

  • 1 ripe plantain
  • 2 tablespoons coconut flour
  • 2 eggs + 1 white (or two flax eggs with 2 teaspoons psyllium husk)
  • 1 scoop of plant protein
  • 1/2 teaspoon cream of tartar
  • 1/4 tsp baking soda
  • ½ tsp vanilla extract (optional)
  • Optional Toppings: yogurt, berries, granola, chocolate, banana, avocado

Instructions

  1. Add the plantain, coconut flour, eggs (or flaxeggs), plant protein, cream of tartar, baking soda and vanilla extract (optional) into a blender and blend until smooth.
  2. Heat up a skillet on medium-high heat and brush with some oil. Pour the batter evenly into the skillet. Allow to cook for about 3 mins then place under the broiler to finish. This keeps it from breaking when trying to flip!
  3. Top with yogurt, berries, granola, chocolate, banana, avocado or anything you want! Serve and enjoy!
