Sweet potatoes are one of my favorite veggies to have. They can be used in so many different ways and one of my favorite ways is in the form of toasts. I love being able to top them with anything I want, sweet or savory. This time, I opted for savory and topped them with avocados and this Chile Lime Shrimp.

What do you need to make these Guacamole Sweet Potato Toasts and Chile Lime Shrimps?
-sweet potatoes
-ripe avocados
-lime juice
– cumin
-red onion
-cilantro
-garlic powder
-jalapeños
-shrimps
-Trader Joe’s chili lime seasoning

How do you make these Guacamole Sweet Potato Toasts and Chile Lime Shrimps?
First, make the sweet potato toast. To make the sweet potato toast, sliced the sweet potatoes into thin pieces. Spray the sweet potato slices with avocado oil. Air fry the sweet potatoes for about 5-7 mins on 390 or bake for 25 minutes on 400 degrees fahrenheit, flipping them halfway).

Next, make the guacamole. Mash the avocados and combine with the lime juice, salt, cumin, red onion, chopped cilantro, garlic powder, and jalapeno and mix well together.

Then, make the shrimps. To make the shrimps, season the shrimps with trader Joe’s chili lime seasoning. Heat a skillet on medium high heat with some oil and sear for about 2 minutes per side.

Finally, top the sweet potato toast with a layer of the guacamole and the shrimps.

  • -1 large sweet potato, sliced into ⅓ inch thickness
  • Guacamole
  • -3 ripe avocados
  • -1-2 tbsp lime juice
  • -½ tsp salt
  • -½ tsp cumin
  • -⅓ cup diced red onion
  • -2 tbsp chopped cilantro
  • -dash or two of garlic powder
  • -1 tbsp minced jalapeño (or sub with a jalapeño hot sauce)
  • Shrimp
  • -1 lb shrimps
  • -Trader Joe’s chili lime seasoning
  • -1 tbsp oil

  1. To make the sweet potato toast, spray the sweet potato slices with avocado oil.
