Calling all shrimp lovers! These BBQ shrimp quesadillas are a must-try. I’ve made them countless times and they’re super quick and easy to make. These quesadillas are packed with flavor and the shrimps add such a delicious flavor to them. Shrimps also cook super fast which is a bonus if you are short on time.

How do you make these BBQ Shrimp Quesadillas?
Make the shrimp. Bring salted water to a boil. Add 1/4 pound of thawed shrimp. Turn off heat, then remove after 3 minutes and place in ice water. Heat some oil over medium high, add 1/2 cup spinach and 1/4 cup sautéed onion and sauté for about 3 minutes. Remove and set on a plate.

Add 3 tortillas of choice to the pan (or one at a time if it’s not big enough), add about 1/4-1/3 cup mozzarella to each (dairy free or regular), then divide spinach mixture between the three. Add a few chopped tomatoes, shrimp (I butterflied them, slicing lengthwise), and drizzle with BBQ sauce. Fold over and serve!

  • 1/4 pound of thawed shrimp
  • 1/2 cup spinach
  • 1/4 cup sautéed onion
  • 3 tortillas of choice to the pan
  • 1/4-1/3 cup mozzarella to each (dairy free or regular)
  • chopped tomatoes
  • BBQ sauce of choice

Instructions
