I made another simple seafood meal today as I was craving some seafood. I chose to make some shrimps and served them with avocado. To make it more interesting, I stuffed the avocado with some chopped tomatoes and mangoes.

-jumbo wild shrimp
-coconut oil
-coconut aminos
-lime
-cilantro
-garlic powder
-chipotle powder
– avocado
-tomatoes
-mango

How do you make this Grilled Chipotle Coconut Lime Shrimp Skewers with Mango and Tomato Stuffed Avocado Boats?
First, make the shrimps. To make the shrimps, pat the shrimps dry with a paper towel. Whisk together the coconut oil with the coconut aminos, lime juice, lime zest, cilantro, garlic powder, and chipotle powder until well-combined. Add the shrimps and allow them to marinate.

Then, heat a pan with some oil over medium-high heat and add the shrimps. Allow the shrimps to sear for 1-2 minutes per side.

Move to make avocado boats. Slice the avocado in half and scoop out the seed. Mix together the tomatoes, mangoes and cilantro together. Scoop the mixture into the avocados.

Finally, serve with the shrimps.

  • -1 lb jumbo wild shrimp
  • -1 tbsp coconut oil, melted
  • -1 tbsp coconut aminos
  • -1 tbsp lime juice
  • -1 tsp lime zest
  • -2 tbsp cilantro
  • -½ tsp garlic powder
  • -½ tsp chipotle powder

  • -1 avocado
  • -¼ cup chopped tomatoes
  • -¼ cup mango chunks
  • -1 tbsp cilantro

Instructions

  1. To make the shrimps, pat the shrimps dry with a paper towel.
