Over here celebrating Meatless Monday with this loaded KALE CASHEW PESTO PASTA! Vegan and gluten-free! Happy Monday loves! Hope you all had a great weekend. I am getting back to routine today after a very low key couple of weeks. To be honest, not feeling so hot today so working at a slower pace. But, I made this tasty pasta for lunch with my leftover pesto from yesterday. How’s everyone doing?
Here are the ingredients you will need to make this Kale Cashew Pesto Pasta:
-chickpea pasta
-fresh baby kale
-fresh basil
-fresh lemon
-cashews
-garlic cloves
-olive oil
-red pepper flakes
How do you make this pesto pasta?
Cook 1 package chickpea pasta according to directions in the package. Make the Pesto: Add all the ingredients for the pesto into a food processor and process until smooth. Toss the pasta with the pesto. Serve with steamed greens, roasted tomatoes, avocado, and vegan parmesan.

- -3 cups baby kale
- -1 cup basil
- -2 tablespoons lemon
- -1/2 cup cashews
- -1 clove garlic
- -1/4 cup olive oil
- -1/4 teaspoon red pepper flakes
- -1/2 teaspoon salt

- -steamed greens
- -roasted tomatoes
- -Avocado
- - vegan Parmesan
Instructions
