Experimented with all the beans this weekend and made some delicious hummus recipes including this curry hummus. I covered some chickpea pasta in this goodness and paired it with some black bean meatballs! Will add the meatball recipe soon!

Curried Hummus:

  • 1 can garbanzo beans (salt free)
  • 2-3 cloves of garlic
  • 2 tablespoons of curry powder (may want to use less if you are using spicy)
  • 1/4 cup of fresh cilantro
  • 1 tablespoon lemon juice
  • 4 tablespoons tahini
  • 3 tablespoons olive oil
  • 3-4 tablespoons of water
  • Salt/pepper to taste
  • (Optional if using a mild curry powder) 1 teaspoon cumin

Place all ingredients in a food processor and process until smooth! If it needs more water add it in and process more.
