PANCAKE Saturday should always include this paleo PLANTAIN PANCAKE PIZZA! (5 ingredient recipe below). Topped this baby with coconut milk yogurt/berries/granola, avocado/micro greens/tahini, strawberries/chocolate chia seeds/chocolate chips and chocolate yogurt spread/bananas/coconut and of course MAPLE CARAMEL ALMOND butter.
Plantain pancake:
- 1 ripe plantain
- 2 tablespoons coconut flour
- 2 eggs + 1 white (or two flax eggs)
- 1 scoop of plant protein
- 1/2 teaspoon cream of tartar and 1/4 tsp baking soda.
Directions:
Blend all ingredients until smooth. Preheat broiler in the oven. Heat cast iron skillet over medium high, grease it well. Pour in batter and spread until completely covered. Once it begins to bubble, place in the oven under broiler for a couple minutes until too is cooked through.
