Chocolate Covered Strawberry Frozen Yogurt Clusters

Ingredients

  • 1 cup finely chopped strawberries
  • 3/4 cup Greek yogurt
  • 3/4 cup whipped topping, thawed
  • 2 1/2 tbsp honey
  • 1/2 cup chocolate chips
  • 1 tsp coconut oil

Instructions

Line a sheet pan with parchment paper and set aside.

Add the strawberries, yogurt, whipped topping and honey to a medium bowl. Mix to combine.

Use a large cookie scoop or ice cream scoop to divide the batter into 8 clusters a place them spread out onto the sheet pan. Place them in the freezer for 2 hours.

Next, melt the chocolate. In a microwave-safe bowl, add the chocolate chips and the coconut oil and heat on high in 30-second intervals until the chocolate it melted.

Remove the clusters from the freezer, then spoon the melted chocolate over each cluster to cover the clusters. Place them back in the freezer for another hour or more, until fully frozen.

Notes

* To store, place the clusters into an airtight container and keep in the freezer.

* For the whipped topping, you can use Cool Whip, Tru Whip or Coco Whip.
