Protein Pistachio Ice-Cream Cookie Dough Bars

Total Time: 2 hours 15 minutes

Ingredients

  • 1 cup almond flour
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • Pinch salt
  • 1/3 cup mini chocolate chips
  • 1 9-oz container whipped topping
  • 1/4 cup pistachio butter
  • 1/4 tsp almond extract
  • 1 1/2 scoops vanilla protein powder

Instructions

Line a 8 1/2 x 4 1/2 inch loaf pan with parchment paper.

Make the cookie dough crust. Add the almond flour, maple syrup, vanilla and salt to a small bowl. Use your hands to mix together until a crumbly dough forms. Add the chocolate chips and mix the chocolate chips into the dough. Pour the mixture into the loaf pan, then pack the dough down to form a crust.

Next, make the filling. Add the whipped topping, pistachio butter, protein powder and almond extract to a medium bowl. Whisk until well-combined and smooth.

Pour the mixture into the loaf pan over the crust and smooth out the top. Place the pan into the freezer for at least two hours.

Remove the pan from the freezer, remove the parchment paper and slice into 8 squares.

Notes

* To store, place the squares into an airtight container and keep in the freezer.
