This simple green chili comes together in less than 25 minutes. Use rotisserie chicken to make it easier if you'd like! Top it off with some crunchy tortilla strips and you're ready for your cozy breakfast.

Easy green chicken chili soup! (gluten free/dairy free/delicious)

Ingredients

  • 2 tablespoons ghee
  • 1 chopped onion
  • 2 cloves minced garlic
  • 2 chopped celery stalks
  • 1 tablespoon chopped jalapeño
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1/4 teaspoon pepper
  • one lime
  • 2 cups broth
  • 1.5 cups salsa verde
  • 1 pound shredded chicken
  • 1 can pinto or white beans(optional)
  • 1-2 teaspoons coconut sugar(optional)
  • Avocado, cilantro, jalapeños, chopped bell peppers and crispy tortilla strips (for topping)

Instructions

    1. Heat 2 tablespoons ghee over medium high, and add onion, garlic, celery stalks, and jalapeño. Sauté for about 5 minutes until softened.
    2. Add salt, cumin, chili powder, oregano, paprika, pepper, and mix together.
    3. Add lime juice, broth and salsa verde.
    4. Bring to a boil, and then reduce to medium.
    5. Add shredded chicken (I air fried some chicken thighs, but you could use cooked chicken breast or rotisserie chicken).
    6. Add pinto or white beans (or omit and use more veggies or cauliflower rice). Cook for another 10-15 minutes.
    7. Taste, and optional add coconut sugar to cut the spice.
    8. Serve, topped with avocado, cilantro, jalapeños, chopped bell peppers and crispy tortilla strips.
