The perfect summer meal on this HOT day here in Boston! Just made this for lunch a little while ago for my boyfriend and I and it was DELISH! Added some greens and leftover thick air fried sweet potatoes and it was perfect. I have had a crazy week and finally took a little break this afternoon to sit in the pool with a cocktail and work on emails..I seared the shrimp but they would be perfect on the grill too.

If you are ready for one of your best meals, here is how you will make these Sweet and Spicy Ginger Lime Shrimps and Stuffed Avocados:

Marinate the shrimps for 15-30 minutes. To make the marinade, mix together the lime juice, tamari soy sauce or liquid aminos, coconut sugar, salt, sriracha, grated ginger, garlic, and olive oil until well combined.

To make the Watermelon Salsa, toss together the diced watermelon, diced cucumber, cherry tomatoes, minced red onion, juice of one lime, coconut aminos, salt and pepper to taste, honey, and chopped cilantro. To make the shrimp, sear or grill the shrimps for 2 minutes per side on medium-high in a large pan or cast iron.

Ingredients

  • 1 pound shrimp

  • 2 cloves minced garlic,
  • 1 tablespoon olive oil
  • WATERMELON SALSA
  • 1 cup diced watermelon
  • 3/4 cup diced cucumber
  • 1/2 cup chopped cherry tomatoes (I used orange)
  • 1/3 cup minced red onion
  • juice of one lime
  • 1 tablespoon coconut aminos
  • salt and pepper to taste
  • 1 teaspoon honey
  • 1-2 tablespoon chopped cilantro
