These roll-ups are so fun to eat and absolutely delicious. I used fresh tilapia from Colombia, which works perfectly! Tilapia is great because it is a flaky white fish but it is firm and stays together when baked. Paired this with a pomegranate and walnut salad and baked herbed butternut squash you’ll have the tastiest meal ever!

What do you need to make this Spinach Pie Stuffed Fish?

-2 lbs tilapia filets
-1 cup frozen spinach, thawed
-½ cup feta cheese
-¼ onions, chopped
-¼ cup Parmesan cheese
-2 tbsp cream cheese
-2 tbsp sun-dried tomatoes, chopped
-1 egg white
-Salt and pepper to taste

How do you make this Spinach Pie Stuffed Fish?
First, preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.

Then, slice the tilapia filets into halves. Salt and pepper the fish on both sides. Afterward, Mix together spinach, feta cheese, onions, parmesan cheese, cream cheese, sun-dried tomatoes, and egg white in a bowl. Spread a layer of the cheese spread on each filet and roll up carefully. Use toothpicks to keep the roll-ups together.

Finally, place the fish on the baking sheet. Brush the fish with oil or ghee and bake for 25 minutes.
