How do you make this Kale Pesto Pasta?
To make this Kale Cashew Pesto Pasta, toss the pasta with the steamed kale, roasted tomatoes, avocado, and parmesan. To make the pesto, add the fresh kale, basil, lemon juice, cashews, garlic clove, olive oil, red pepper flakes, and salt together in a food processor and process until smooth. Finally, toss the pesto with the pasta and enjoy this pasta bowl!

- 1 box chickpea pasta
- ½ cup Steamed kale
- ½ cup Roasted tomatoes
- ½ avocado, chopped
- Vegan parmesan (for topping)
- 3 cups kale, fresh
- 1 cup basil, fresh
- ½ cup cashews
- ¼ cup olive oil
- 2 tbsp lemon juice
- ¼ tsp red pepper flakes
- ½ tsp salt
- 1 clove garlic
- Toss the pasta with the steamed kale, roasted tomatoes, avocado and parmesan.
- To make the pesto, add all the ingredients for the pesto together in a food processor and process until smooth.
- Toss the pesto with the pasta. Enjoy!
