Who doesn’t like an easy and filling meal that can be put together in 15 minutes or less? This Kale Cashew Pesto Pasta is one of those meals that should be kept handy when you need to put together an easy and flavorful meal. Once you make this pesto, you can add them to any pasta of your choice, salads, sandwiches and more!
What is needed to make this Kale Cashew Pesto Pasta?
-chickpea pasta or any pasta of choice
-vegan parmesan (or regular if not vegan)
-raw, unsalted cashews
-red pepper flakes
How do you make this Kale Pesto Pasta?
To make this Kale Cashew Pesto Pasta, toss the pasta with the steamed kale, roasted tomatoes, avocado and parmesan. To make the pesto, add the fresh kale, basil, lemon juice, cashews, garlic clove, olive oil, red pepper flakes and salt together in a food processor and process until smooth. Finally, toss the pesto with the pasta and enjoy this pasta bowl!
- 1 box chickpea pasta
- ½ cup Steamed kale
- ½ cup Roasted tomatoes
- ½ avocado, chopped
- Vegan parmesan (for topping)
- 3 cups kale, fresh
- 1 cup basil, fresh
- 2 tbsp lemon juice
- ½ cup cashews
- 1 clove garlic
- ¼ cup olive oil
- ¼ tsp red pepper flakes
- ½ tsp salt
- Toss the pasta with the steamed kale, roasted tomatoes, avocado and parmesan.
- To make the pesto, add all the ingredients for the pesto together in a food processor and process until smooth.
- Toss the pesto with the pasta. Enjoy!
