Mexican Salmon Burgers, Chili Lime Fries, and Pineapple Jalapeno Cucumber Salsa

The perfect summer meal to have! These Mexican Salmon Burgers are served with crispy Chili Lime Fries, and a refreshing Pineapple Jalapeno Cucumber Salsa.

MEXICAN SALMON BURGERS, CHILI LIME FRIES and PINEAPPLE JALAPEÑO CUCUMBER SALSA! (Paleo friendly) What better way to celebrate the last weekend of the summer (or any time really 🙃). They are light, tender and crispy in the outside...Made these last week with some leftover salmon and they were so easy and so tasty! Made a quick chipotle yogurt sauce to go with it. Happy Sunday loves. Hope you’re all having a fabulous long weekend. Doing a lot of relaxing today...we might go to a cookout later, but for now just taking it slow for Sunday afternoon. How do you make these Mexican Salmon Burgers, Chili Lime Fries, and Pineapple Jalapeno Cucumber Salsa?
Make the burgers. Use a fork to flake the salmon in a bowl. Add all other ingredients for the burgers and mix together well until everything is mixed together. Form into 3-4 patties.
Heat 2 teaspoon of oil over medium high and cook the salmon for about 3 minutes per side.
Make the salsa.Combine all the ingredients for the salsa- 1 cup diced pineapple, 1 cup diced cucumber, 1/4 cup diced red onion, 1 tablespoon chopped cilantro, 1-2 teaspoon minced jalapeño, 2 tablespoon lime juice, 1/4 cup minced red bell pepper, 1/4 teaspoon salt or to taste together. Mix well.

Make the Aioli. Mix together a few tablespoon Greek style yogurt, 2 teaspoon lime juice, chipotle hot sauce to taste and a few dashes of coconut aminos.

  • BURGERS
  • 1/2 pound cooked salmon (skin removed)
  • 1/3 cup ground tortilla chips
  • 1.5 tablespoon mayo
  • 1 teaspoon mustard
  • 1/4 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 tablespoon cilantro
  • 1 egg yolk
  • 1/3 cup minced onion
  • SALSA
  • 1 cup diced pineapple
  • 1 cup diced cucumber
  • 1/4 cup diced red onion
  • 1 tablespoon chopped cilantro
  • 1-2 teaspoon minced jalapeño
  • 2 tablespoon lime juice
  • 1/4 cup minced red bell pepper
  • 1/4 teaspoon salt or to taste
  • AIOLI
