You know I love my fries, but I’ve never been a huge ketchup person (unless it’s got some spice or unique flavor. But this beet ketchup is my jam…it has some wonderful spices to make it flavorful and apple cider vinegar for some tang. I seasoned the sweet potato fries with some paprika, salt and pepper. It was the perfect pairing!

Recipe:

  • 2 large beets roasted (peeled and cubed)
  • 1/2 Cup apple cider vinegar (could also try balsamic for sweeter)
  • 14 pitted dates
  • 1/4 tsp clove
  • 1/2 tsp fresh ginger
  • 1/2 tsp onion powder 1 clove roasted garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • a pinch of red pepper flakes

First, preheat oven to 425, wrap the beets whole (wash first) in foil and roast for about 45 mins (or more) until tender all the way through. Removed from oven, peel and cube the beets and add them to blender. Add the rest of the ingredients and blend until smooth.
