I got a DIY sushi kit from @globalgrub and decided to experiment! These rolls were delicious! I made a cauliflower sushi rice and it came out perfect! I filled it with smoked salmon, arugula, purple sweet potatoes and avocado. Sushi “Rice” (makes enough for 2 small 6-piece maki rolls)
- 2 cups grated cauliflower
- 1 tsp coconut oil
- 1 tablespoon lemon juice (or could use rice vinegar)
- 1/2 tsp salt
- 1/3 cup almond or coconut milk
- 1 scoop @sportsresearch beef gelatin
Grate cauliflower (I used a cheese grater). Heat oil in a pan over medium high and add cauliflower. Sauté for a couple minutes. Stir constantly. Add lemon juice, salt and sprinkle beef gelatin over the cauliflower and continue stirring. Add the milk and bring to a boil. Cook until almost all liquid has evaporated. You don’t want to see liquid settling in the bottom. Flatten the rice and refrigerate for a bit to allow it to become “sticky.”
