Hi all! I wanted some meatballs today so I made these mushroom/spinach chicken meatballs! The key to moist grain free meatballs: lots of chopped mushrooms! These babies were only five ingredients! happy Thursday loves!
For this bowl I filled it with arugula, roasted kabocha, roasted mini peppers, roasted Brussels, hassleback roasted eggplant, 4 ingredient chicken spinach-mushroom meatballs, caraway seeds and drizzled with a mix of @soomfoods Tahini and @victoryhempfoods Hemp oil.
Meatballs:
- 1 pound of ground chicken (or turkey)
- 3 egg whites or one egg
- 1/2 diced bell pepper
- 1/2 cup shredded spinach
- 1 small carton mushrooms minced
- Spices (I used @paleopowder Italian blend)
Preheat oven to 425. Mix all ingredients together in a bowl. Form into balls and place on parchment paper on a baking sheet. Bake for about 10-15 minutes until firm!
