SUNDAY pancakes, truly there is nothing better. Slow Sunday mornings and fluffy pancakes stacked to the heavens. This Sunday was better than ever. I made some paleo pancakes using Bob’s Red Mill paleo mix…they were so fluffy. I topped these off with my favorite pecan butter from Georgia Grinders, my homemade blueberry jam that has no added sugar and made from just two ingredients, and some apple cinnamon paleo granola from Organic Gemini. They were the perfect taste of fall. Give this a try!

Blueberry Jam:

  • 1 cup of fresh blueberries
  • 1 scoop of beef gelatin (I use Sports Research)

Heat blueberries over medium high until the berries are broken down and soupy. Remove from heat and quickly stir in the beef gelatin with fork making sure to not let it clump. Refrigerate for about a half hour, or if you want to use it right away you can put in freezer and take out and stir about every 5-10 minutes until creates a jelly consistency but don’t let it cool completely, you want to be able to pour it over those pancakes!
