Grain-Free, Low-Sugar Maple 🍁 Banana 🍌 Tahini Muffins! It’s supposed to be cold and rainy tomorrow here is Boston, so you bet you can find me in the kitchen doing some baking this weekend! Need some inspiration? These muffins are so moist and delicious with just the perfect amount of sweetness paired with a hint of maple and tahini! With these flavor combos you can’t go wrong!   • 1/2 cup @soomfoods tahini
  • 1 tablespoon melted and cooled @nutiva coconut oil 
  • 2 tablespoons Maple Syrup (I used @lakantosweetener Maple syrup for lower sugar-monk fruit sweetened)
  • 1/2 teaspoon vanilla
  • 3 ripe bananas mashed
  • 3 eggs (or 1 egg plus 4 whites)
  • 1/2 cup coconut flour 
  • 1/2 teaspoon cream of tarter
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon Himalayan salt
  • 1/2 teaspoon cinnamon

Preheat oven to 350. Mix wet ingredients (up to the eggs) in one bowl with a whisk or kitchen aid mixer. Mix dry ingredients in another bowl. Add dry to wet and be sure it is mixed well. Pour batter into muffin cups evenly divided. Top with sesame seeds and bananas or chocolate! Bake for about 20-25 minutes until firm.
