Raise your hand if you like CHICKEN SATAY 🙋 For some reason out of no where I got a hankering for it, and it’s been a long time since I’ve had it! SO…I made some 🤷♀️ This recipe calls for just 8 simple ingredients…and no fish sauce! Served it with a spicy tahini sauce (made with @soomfoods Tahini). I had a little extra marinade so I did some eggplant slices too 😋 served over an arugula and red cabbage and roasted mushroom salad, plus some kabocha fries. SO GOOD.
Chicken Satay:
- 1 pound boneless organic chicken breast (or thighs!) pounded thin (about 1/4 inch thick) l and cut into long slices for skewers
- 3 tablespoons @so_delicious Unsweetened coconut milk yogurt
- 1 tablespoon curry powder
- 1 1/2 tablespoons lime juice
- 2 tablespoons coconut aminos
- 2 tablespoons @bragglivefoods Liquid aminos
- 1 tsp ginger minced
- 1 garlic clove minced
- 2 teaspoons sesame oil @chosenfoods
Mix ingredients together and marinate chicken for a few minutes (or as long as a couple hours!) skewer each slice of chicken. Heat cast iron grill over medium high heat and spray with oil. Grill on each side for about 2 minutes. Remove and enjoy! Could use a regular skillet if you don’t have a grill pan.
Tahini Sauce
- 1/4 cup tahini (Soom Foods)
- 2 tablespoons lime juice
- 2 tablespoons coconut aminos
- 1 tablespoon Braggs Liquid Aminos
- 2 tablespoons Heat and Flavor Fire Roasted Garlic hot sauce
Whisk together ingredients! That’s it!
