Made some new muffins yesterday! These banana blueberry muffins are grain free with no added sugar and made with cauliflower! They are super moist and the perfect amount of sweetness (for me!) Check them out! They are a great alternative to super sugary banana bread and taste amazing with some nut butter smeared over them 😜

  • 1/2 head of cauliflower 
  • 2 ripe bananas 
  • 1 tsp cream of tarter
  • 1/2 tsp baking soda
  • 1/2 cup coconut flour (I used Nutiva)
  • 1 egg plus 3 whites
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2/3 cup blueberries

Preheat oven to 375. Place cauliflower (cut up) into food processor and process until almost smooth. Add the bananas and process again until smooth. Now add all the other ingredients (except blueberries) and process for a couple minutes until smooth and well mixed. Pour batter into a bowl and mix in the blueberries. Now pour batter into muffin cups, dividing evenly. Bake for about an hour until cooked through. Let the muffins cool completely, since they are very moist from the cauliflower. Enjoy!
