I have a treat for y’all! PALEO, NO-SUGAR REESES PUFFS! Who doesn’t love REESES PUFFS?! It was always one of my favorites as a kid. Well, I made a version that is packed with protein (collagen!), fiber and grain-free! It is also peanut-free since I used sunbutter, but if you eat peanut butter feel free to replace. It’s super addicting, and I highly suggest you make this ASAP! Happy Thursday loves!! Also…GO PATRIOTS 🏈! Going to be topping some ice cream with this tonight 😜

  • 1 cup almond flour @bobsredmill 
  • 3 tablespoons @nutiva coconut flour
  • 4 scoops of @sportsresearch marine collagen peptides
  • 1 tablespoon coconut oil
  • 1/2 tsp vanilla
  • 1.5 tablespoons cocoa powder @nunaturals 
  • 1/4 teaspoon @nunaturals monk fruit powder (or stevia or 1/4 cup honey/coconut sugar)
  • 1/4 teaspoon Himalayan salt
  • 1 egg white
  • 1.5 teaspoons @nunaturals tagatose (or coconut sugar-tagatose is prebiotic)
  • 2 tablespoons @sunbutter 
  • 1 tablespoon @ottos_cassava_flour 

Preheat oven to 375. Mix together almond flour, coconut flour, salt, egg white, vanilla, monk fruit, collagen and coconut oil to form a sticky ball. Divide the mixture into two bowls. Mix one of the balls with cocoa powder and tagatose, and mix the other with sunbutter and cassava flour. Make sure you mix well by hand to incorporate all ingredients. Now, the hard part! I might hire someone to roll the balls next time 😂 Roll the mixtures into balls slightly larger than peas. Place on a piece of parchment paper on a baking sheet and bake for about 15 minutes until they are cooked and just slightly brown and crisped. Remove from oven and let them cool!
