TACO TUESDAY with HOMEMADE GRAIN-FREE TORTILLAS!! Heck freaking yes! I’ve honestly never attempted making my own tortillas, so the fact that my first attempt was a HUGE success felt amazing! They were so easy, and only required FOUR ingredients! They hold together sooooo well, just like a flour tortillas would! I used @ottos_cassava_flour to make them, and as much as I LOVE Siete Foods tortillas, the price tag on these were so worth it. And they only took like 10 minutes to make! Cassava flour is easier to digest than tapioca, which comes from the cassava root. Why? Because this flour is made from the entire root and it is not bleached and processed. It is super nutritious and works so well in recipes! I filled two of these babies up with grilled chicken, @organicgirl arugula, red cabbage, tomatoes, avocado, quick pickled onions, julienned kabocha squash, cilantro and chipotle-lime-yogurt sauce (recipe on the blog all ready) using @heatandflavor chipotle sauce and @foragerproject cashew milk yogurt! HAPPY TUESDAY!!

Grain-Free Tortillas: (makes 6 tortillas)

  • 3/4 cup of Cassava flour
  • 1 tablespoon olive oil
  • 1/2 cup plus 1 tablespoon of warm water
  • 1/2 teaspoon Himalayan Salt

Mix all ingredients together in a bowl to make a “dough.” If the dough seems dry at all, add another tablespoon of water. Should not be too dry or too sticky. Form 6 even-sized balls, and then one at a time, place each ball in between two pieces of parchment paper. Use a glass or rolling pin to roll the ball into a thin tortilla. Heat a cast iron skillet or nonstick skillet over medium high heat and heat each tortilla one at a time, waiting about a minute on each side. You will see bubbles start to form, this is time to flip. Each side should get slightly brown. Remove and stack them on a plate.

Quick Pickled Red Onions:

  • 1/2 red onion sliced thinly (about 1/4 inch thick)
  • 1/2 cup Apple Cider Vinegar
  • 1 teaspoon Himalayan Salt
  • 1 tablespoon peppercorns
  • 1 teaspoon mustard seed
  • 1/4 teaspoon coconut sugar (optional to add a little sweetness)

Heat all ingredients to a boil (except for onions) and whisk to combine. Once boiling, add the onions then remove from heat and let sit for about 5-10 minutes before they are ready to use!
