Went a bit non traditional with Taco 🌮 Tuesday and made some nachos! Not your traditional nachos… this plate of goodness was made with crispy kale chips! I made some homemade kale chips by tossing pieces of kale with @nutiva coconut oil, Himalayan salt and pepper and roasted them on a baking sheet for about 12 minutes on 450. (If you do this, watch them carefully so they don’t over cook!) I topped them with shredded cabbage, tomatoes, avocado, roasted mini peppers, roasted mushrooms, olives, cilantro and turmeric ground turkey 🦃😍 added a few @sietefoods nacho tortilla chips…duh!… and topped with a spicy chipotle yogurt sauce. It was soooo tasty! Happy Tuesday loves!
Spicy Chipotle Yogurt Sauce:
- 1/2 cup @foragerproject unsweetened plain cashew milk yogurt (or yogurt of choice)
- 2 tbls lime juice
- 3 tbls coconut aminos
- 2 tbls @heatandflavor chipotle hot sauce—OBSESSED with this hot sauce.(can use hot sauce of choice, but if you’re a chipotle fan, I HIGHLY recommend this!)
