Chopped chicken salad with dairy-free (#vegan option) tzatziki! Feeling alllll the veggies today, and when you have fresh dill, mint and yogurt…well, you make tzatziki of course!! Love traveling, but also love being back in my own kitchen of course. I filled up this bowl with @iloveorganicgirl baby spinach, red cabbage, tomato, roasted red peppers , avocado, sautéed zucchini in @nutiva coconut oil, roasted mushrooms and red onion. I sprinkled some Himalayan salt, dried oregano, pepper and lemon juice on a chicken breast and pan seared, then chopped it up and added it in! Recipe for my dairy-free tzatziki below.
Dairy-free tzatziki:
-1/2 cup @kitehillfoods almond milk plain unsweetened yogurt
-1 tablespoon lemon juice
-1/4 tsp Himalayan salt
-pepper to taste
-1 tablespoon fresh chopped dill
-1/2 tablespoon of minced fresh mint
-1 garlic clove minced -optional: 1 tablespoon chopped peeled cucumber -1.5 tsp olive oil
-optional: 1 scoop of @furtherfood collagen
