Chopped chicken salad with dairy-free (#vegan option) tzatziki! Feeling alllll the veggies today, and when you have fresh dill, mint and yogurt…well, you make tzatziki of course!! Love traveling, but also love being back in my own kitchen of course.
I sprinkled some Himalayan salt, dried oregano, pepper and lemon juice on a chicken breast and pan seared, then chopped it up and added it in! Find the recipe for my dairy-free tzatziki below.
-1/2 cup @kitehillfoods almond milk plain unsweetened yogurt
-1 tablespoon lemon juice
-1/4 tsp Himalayan salt
-pepper to taste
-1 tablespoon fresh chopped dill
-1/2 tablespoon of minced fresh mint
-1 garlic clove minced -optional: 1 tablespoon chopped peeled cucumber -1.5 tsp olive oil
