Happy Saturday Everyone! Hopefully a happy one it is 😍 I’ve had such a lovely day! Started off with an early spin class with one of my best friends at @turnstyleboston followed by a wonderful breakfast from @tridentbooks. It was beautiful out this morning! I’m dog sitting for the weekend so I took the pup for a walk before it got cloudy again… But about this lunch! PALEO KALE CHICKEN CAESAR salad for lunch today! This post is really all about this #vegan and paleo Caesar dressing! I finally made a good one! Bowl deets: organic kale, red onion, sautéed mushrooms, roasted Kabocha, cucumber, radishes, roasted chicken, PALEO croutons from @knowfoods (delish!!) and this creamy dressing! Recipe below! I hope you enjoy your afternoons! Meeting a friend for sushi later…talk about a day filled with lots of good food and company 😍😍

Dressing recipe:

  • 1/4 cup @kitehillfoods unsweetened almond milk yogurt
  • 2 tsp whole grain Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tsp @amoretti organic olive oil
  • 1 clove minced garlic
  • 2.5 tsp coconut aminos
  • 1/2 tsp apple cider vinegar
  • 3 tbls @traderjoes nutritional yeast
  • salt/pepper to taste

Mix it all up!
