Happy Saturday Everyone! Hopefully a happy one it is 😍 I’ve had such a lovely day! Started off with an early spin class with one of my best friends at @turnstyleboston followed by a wonderful breakfast from @tridentbooks. It was beautiful out this morning! I’m dog sitting for the weekend so I took the pup for a walk before it got cloudy again… But about this lunch! PALEO KALE CHICKEN CAESAR salad for lunch today! This post is really all about this #vegan and paleo Caesar dressing! I finally made a good one! Bowl deets: organic kale, red onion, sautéed mushrooms, roasted Kabocha, cucumber, radishes, roasted chicken, PALEO croutons from @knowfoods (delish!!) and this creamy dressing! Recipe below! Dressing recipe:
- 1/4 cup @kitehillfoods unsweetened almond milk yogurt
- 2 tsp whole grain Dijon mustard
- 1 tablespoon lemon juice
- 1 tsp @amoretti organic olive oil
- 1 clove minced garlic
- 2.5 tsp coconut aminos
- 1/2 tsp apple cider vinegar
- 3 tbls @traderjoes nutritional yeast
- salt/pepper to taste
Mix it all up!
