Burger night was always a staple in my house. Especially in the summer months. My mom would make her famous potato salad and I would gather fresh lettuce, cucumbers and tomatoes from the garden. I would help her form the patties before she lit the grill and got down to business! Her method was so simple – just a little salt and pepper and don’t handle the meat too much! She always made the best burgers! Now, don’t get me wrong I still LOVE a good burger, but I was on a mission to make a delicious vegan burger! I still wanted to have tons of flavor and good texture. So I gathered some whole food ingredients and created these chipotle style tofu-chia-veggie burgers. The texture is wonderful and the flavor is on point! The one thing I want to stress about this recipe is to make sure you drain all the liquid out of the tofu to ensure there is no excess water in the burgers! I enjoyed this one on a piece of @julianbakery paleo bread and it was delicious!

Tofu-Chia-Veggie Burgers 🍔 :

1️⃣ 1/2 block of firm tofu pressed and drained
2️⃣ 1/2 cup red pepper 🌶 finely diced
3️⃣ 1/3 cup red onion finely diced
4️⃣ 1/2 cup of mushrooms diced
5️⃣ 1/4 cup @salbachia white chia seeds
6️⃣ 2 tablespoons @nutiva coconut flour
7️⃣ 1/2 teaspoon Himalayan salt
8️⃣ 1/2 teaspoon black pepper
9️⃣ 1/2 tsp ground Chipotle 🌶
🔟 1/2 cup cilantro chopped
Preheat oven to 375. Mix the chia seeds with 1/3 cup of hot water in a bowl and whisk to mix them. Let this sit and create a gel. In a separate bowl mix together the rest of the ingredients, crumbling up the tofu as you add it. Use your hands to make sure all spices and ingredients are mixed well. Be sure that the tofu has been squeezed of any extra liquid to ensure the burgers don’t get mushy. Once all ingredients are mixed well, add in the chia gel and work into the mixture with your hands. Form the mixture into four larger patties or 8 small ones. Heat a skillet on medium-high, spray with coconut or avocado oil, and place the patties in the skillet to sear each side for about a minute. Then, place the burgers on a baking sheet (covered with parchment paper or aluminum foil) and bake for about 20-25 minutes, flipping halfway through. Remove from oven and enjoy! I put this one between two slices of @julianbakery paleo bread with tomato 🍅 avocado 🥑 and lettuce 🌿! Spread on some mustard, ketchup, hummus or mayo! 😋
