Waffle Wednesday upon us again! Weather is keeping up so I’m super stoked, maybe not 80 but sunshine ☀️ I had the most delicious sushi last night last night and I’m still dreaming about it…there’s nothing like delicious fresh sushi rolls…these were made with purple akai rice! So good 😊 These waffles though! –> plantain waffles with @kitehillfoods almond milk yogurt and frozen raspberries and blueberries! Perfect Hump Day fuel ⛽️💪



Waffles:
1/2 one large ripe plantain
1/2 scoop @sunwarriortribe #vegan protein powder
1.5 tablespoons @nutiva coconut flour
1 scoop @sportsresearch collagen peptides
1 @egglandsbest egg
2 egg whites
1 tablespoon @bobsredmill ground flax



Blend ingredients and spray waffle iron with @chosenfoods avocado oil. Cook waffles for 2-3 minutes at a time.
