Paleo Plantain Pancake Friday! Say that 5 times fast! It had to happen….I was craving pancakes today after my workout. @approachingpaleo inspired me to buy plantains the other day 😉 and so happy I did! This recipe might be my new favorite pancake recipe! I layered them with a homemade blueberry-lemon chia seed jam and topped with more jam and @kitehillfoods almond milk yogurt. They were SO GOOD, wonderful texture and flavor. •

1/2 yellow plantain
1 tbls @nutiva coconut flour
1/2 scoop @sunwarriortribe #vegan vanilla warrior blend
1/2 scoop @sportsresearch collagen
1 @egglandsbest egg
4 egg whites
1/2 tsp cream of tarter
@nunaturals vanilla drops

Blend until smooth, spray skillet with @chosenfoods avocado oil and pour about 1/3 cup batter at a time, cooking until bubbly on one side then flip. •

For the lemon blueberry chia jam I heated 1/2 cup blueberries with 1 tablespoon of @salbachia chia seeds and a few drops of @nunaturals lemon drops!
