Everyone needs some sweet in their life every once in a blue moon! AMIRIGHT? Well, for those of you who want decadent and delicious, but still low in sugar and grains…this one is for you! And, for those of you who don’t care, this one is STILL for you! I adapted these avocado fudge squares from a few different recipes I found and sort of made my own version. I took the most input and advice from @fitmittenkitchen’s blog and added some collagen peptides for an extra boost of protein and health…plus I think collagen adds a wonderful lecture to almost anything…but that is just me. I use sunflower seed butter, which tends to be my go-to nut butter. I try to avoid too many nuts, as much as they supposedly have great benefits. They also tend to bring mold into the body…for another post though. You could sub with any nut butter though. I also use raw cacao powder, but you could use cocoa powder or carob! I plan to make a version of these with carob, because I LOVE carob. Make sure the avocado is super ripe! I also want to make a version with stevia, rather than maple syrup. I will let you know how they come out! Don’t forget to enjoy ūüôā

Recipe:

1/3 cup of sunflower butter (I use no salt, no sugar by Once Again Nut Butter)

1 very ripe avocado

2-4 tablespoons of maple syrup or other sweetener of your choice

1 tsp vanilla extract

1/2 cup raw cacao powder

2-3 scoops of Sports Research collagen peptides

1/4 tsp himalayan salt

1/4 cup unsweetened coconut flakes

walnuts for topping (optional)

Directions:

Put avocado, nut butter, maple syrup and vanilla in a bowl and immerse with an immersion blender until smooth. Add in the cacao powder, collagen, salt and coconut and mix well with a wooden spoon until smooth. Put a layer of parchment paper in the bottom of a loaf or square baking pan and spread batter evenly. Top with walnuts or any topping of your choice! Place in freezer for at least 2-3 hours and then cut up and enjoy!
